Daifuku is a soft rice cake stuffed with sweetened bean jam. And it is a Japanese sweet representing the Edo era.
This is a special Daifuku for summer, "Hiyashi Daifuku". The texture is soft and melts away. This is a novel because agar is mixed.
My grandmother likes this very much.
You can buy this at Kikunoya in Ginza.
Ingredients here.
Adzuki bean , Sugar , Starch , Rice cake powder , Grape sugar , Agar , Polysaccharide (sugar polymer containg multiple (many) component simple sugars) , Eggshell calcium , Trehalose
